This traditional, plant-based Greek Salad will take you on a trip to Greece, thanks to the key ingredients of extra virgin olive oil, olives, tomatoes, and capers.

- 2 medium cucumbers, sliced
- 4 medium tomatoes, sliced
- ½ red onion, sliced
- 1 green bell pepper, sliced
- ½ cup Greek olives, drained, whole
- 1 tablespoon drained capers
- 1 ½ tablespoons extra virgin olive oil
- 1 lemon, juiced
- 1 teaspoon dried oregano
- Optional: Salt and pepper, to taste
Instructions
- Mix cucumbers, tomatoes, onion, pepper, olive, and capers in a medium salad bowl.
- Drizzle with olive oil and lemon juice. Add oregano and season with salt and pepper. Toss well. Chill until serving time.
