Ingredients

1 can each of:

  • vegetarian refried beans
  • diced tomatoes, drained
  • kidney beans, drained and rinsed
  • sliced black olives

and

  • 1 to 2 ounces of reduced-fat cheddar cheese


Instructions

  1. Mix all ingredients into a bowl and pour into a casserole dish that’s been sprayed with nonstick cooking spray.
  2. Heat in the oven or microwave oven.
  3. Serve with whole-grain tortillas, nonfat Greek yogurt or sour cream and jarred salsa.

Notes

*use plant-based cheese to make it vegan
