Top 10 Vegan Thanksgiving Recipes

Butternut Squash Salad with Barley and Kale

I love the fall combination of butternut squash, kale, barley and hazelnuts—all wrapped together in this comfort food, hearty salad.

Balsamic Butternut Squash and Brussels Sprouts with Farro

Nothing spells holiday comfort like butternut squash and Brussels sprouts! These vegetables offer so much savory goodness when roasted and paired together, as they are in this simple farro dish.

White Bean Sage Vegan Meatballs with Pomegranate Mandarin Sauce

How about something truly savory and party worthy for your holiday table? These veggie balls are filled with the flavors of sage, mushrooms, and white beans, served with a gorgeous, ruby-colored sauce, which was inspired by my pomegranate tree!

Stuffed Acorn Squash with Quinoa and Cranberries

Thanksiving is the time to celebrate the abundance of winter squashes. One of my favorite ways to cook with squashes is to simply split them open, scoop out their seeds, and fill that cavity with something scrumptious—such as a savory, herbal filling. I showcased meatless crumbles (which you could replace with cooked lentils) in this recipe, along with quinoa, Tuscan herbs, cranberries, and walnuts. Perfect to impress at the holidays!

Vegan Broccoli Walnut Au Gratin

If you’re looking for a comfort food, holiday side-dish or potluck contribution, look no further than this yummy, easy casserole. I adapted this 100% plant-based recipe from a California Walnut recipe, which I featured on a recent Hallmark TV Channel Home & Family show. Try substituting cauliflower for broccoli for a quick alternative.

Cranberry Oat Pilaf

Who says holiday side dishes have to only involve stuffing and sweet potatoes? I created this super simple plant-based side dish that involves one skillet and a short list of ingredients, such as oats, cranberries, pistachios, and turmeric. Yet, it’s so simple, nutritious and flavorful! It’s the perfect holiday dish.

Cranberry Apple Leek Whole Grain Stuffing

This Cranberry Apple Leek Whole Grain Stuffing is just the thing you need for your holiday table! Filled with rustic bread, sweet-tart cranberries, and earthy leeks, it’s delicious as a side-dish to accompany lentil patties, a nut loaf, and savory gravy!

Cranberry Relish with Walnuts

I love to make my own home-made cranberry relish for the holidays. This recipe—featuring dried cranberries—is super easy. I adapted it from a recipe from California Walnuts, which I demonstrated on the Hallmark TV Channel Home & Family Show for the holidays.

Cinnamon Apple Crumble

Nothing spells holiday comfort like the combination of spicy cinnamon and sweet apples! One of the healthiest, fruit-centric desserts you can whip up is a baked apple crumble, with a thick layer of juicy apples and a crunchy whole grain topping. Every delicious bite is packed with fiber and nutrients.

Pomegranate Ginger Sparkler

If you’re looking for an alcoholic drink full of holiday cheer, here’s the beverage for you! It’s bright with the flavors of pomegranate juice, ginger beer, and mint—with a touch of vodka. Serve it in mason jar glasses filled with crushed ice and a festive straw.
