These healthy PB & J bars take full advantage of that kid-friendly classic combination—peanut butter and jelly. But looks are deceiving, because these delicious bars are light in sugar, rich in whole grains, and filled with the goodness of whole fruits, complements of two full pouches of Sprout Organic Berry Grape Smoothies   incorporated into the mix. These bars are completely vegan, and can also be made gluten-free by switching out the whole wheat flour for a gluten-free flour blend. The bars pack in yummy peanut butter, with a spread of creamy berry filling between the layers—all topped off with crunchy peanuts. This healthy recipe will be a sure winner with your young children.

I love baking with Sprout Organic Baby and Toddler Food purees, because these wholesome children’s products are made from real, organic, whole plant foods, such as fruits, vegetables, grains, and pulses, meaning you can fit nutritious whole foods into your kids’ (and their parents’) diets! The ingredients for these bars include peanut butter, Sprout Organic Berry Grape Smoothie pouches, whole wheat flour, brown sugar, peanuts, and chia seeds.
Mix up the dough.
Pat about two-thirds of the dough in a baking dish.
Spread with one pouch of Sprout Organic Berry Grape Smoothie.
Top with remaining dough and peanuts. Bake, cool, and slice into bars!

Instructions

  1. Preheat the oven to 375 F.
  2. In a mixing bowl, mix together chia seeds with 1 pouch Sprout Organic Berry Grape Smoothie and water and let stand for 2 minutes.
  3. Blend in peanut butter and brown sugar and mix until smooth
  4. Mix in flour, baking powder, and salt (optional) just until smooth.
  5. Spray a 9 x 9-inch square baking dish with nonstick cooking spray.
  6. Spread out about two-thirds of the dough on the bottom of the baking dish, patting with fingers to distribute it evenly across the bottom of the dish.
  7. Spread the remaining pouch of Sprout Organic Berry Grape Smoothie over the dough evenly.
  8. Drop pieces of the remaining dough over the mixture.
  9. Sprinkle with chopped peanuts.
  10. Place in oven and bake for about 55 minutes, until firm and baked through.
  11. Allow to cool for about 30 minutes (to set bar), and then slice into bars.
  12. Store leftovers in an airtight container in the refrigerator.

Notes

To make this gluten-free, substitute whole wheat flour with a gluten-free flour, such as a gluten-free flour blend or sorghum flour, to make this recipe gluten-free and wheat-free.

May substitute peanut butter with almond butter and peanuts with almonds.
