Ah, those first truly warm days of the summer. Lazy long weekends. Spending time outdoors with friends and family. Really good food, grilled open-air and served outdoors. Those are the elements of a wonderful Fourth of July holiday. In my home, I center the menu upon an amazing array of grilled plant-powered foods. Some people might say that grilling is just for carnivores, but I beg to differ! So many yummy plant-forward dishes, including summer vegetables, lentil patties, veggie burgers, tubers, fresh corn, skewers, and fruit, can be cooked to perfection on the grill!
