Easy Light Mojito

Sharon Palmer

Filled with fresh mint and juicy-tart lime, a mojito is one of the most refreshing cocktails. I learned how to make my first mojito at a culinary event in Puerto Rico at Bacardi several years ago. I’d never even heard of this traditional Cuban alcoholic beverage, which is made from essential, local ingredients in the Caribbean, including sugar cane, limes, mint, and rum. I lighten up my version with just a touch of agave nectar, and sparkling water instead of sugary sodas often added to these drinks. You can use whatever rum you prefer—silver rum gives this drink a sparkling clarity, while golden rum adds a more amber hue. The secret is making each drink separately, mudding the mint in a wide cocktail glass, then layering in the, agave, rum, and freshly squeezed lime juice. Then filling the glass with ice, and topping it off with sparkling mineral water. Oh, and garnish it with more lime and mint!

Step-By-Step Guide:

Gather together your ingredients: sparkling mineral water (lime or plain), agave nectar, rum (silver or gold), lime, mint, muddler, ice cubes, and glasses.
Add mint leaves to the bottom of the glass and crush it with a muddler.
Add a touch of agave nectar.
Add rum.
Add freshly squeezed lime juice. Muddle together with muddler.
Fill glass with ice cubes.
Fill glass with sparkling mineral water. Stir well.
Garnish with lime slices and mint leaves. Cheers!
