My 21-Day Vegan Challenge in Yoga Journal
Interested in the health benefits of a vegan diet, but don’t know where to begin? Why not start with my 21-day Vegan Challenge which I created for Yoga Journal in honor of national vegetarian month! By joining the challenge, you will have access to three weeks worth of my healthy recipes, vegan meal plans, and meal planning tips. It was a really fun project to work with the editorial and art team at Yoga Journal. We spent weeks planning this issue because we wanted to provide a really simple, accessible tool for people to try out a vegan diet. Plus we wanted the vegan challenge to be based on delicious, whole plant foods, and nutritionally balanced to meet 100% of your nutrient needs. I developed several delicious recipes just for Yoga Journal, including Butternut Squash Barley Kale Salad, Thai Tempeh Noodle Bowl, and Bean Cassoulet with Root Vegetables.
