
Avocado Grapefruit Ensalada

3 cups packed, torn-up romaine lettuce
2 medium grapefruits, peeled and separated into sections
1 medium avocado, cut into thin wedges
3 green onions, thinly sliced
1 tablespoon extra virgin olive oil
1 tablespoon lemon juice
1/8 teaspoon ground cumin
1.Lightly toss together the lettuce, grapefruits, avocado, and green onions in a salad bowl.
2.Whisk together the olive oil, lemon juice, and cumin in a small bowl. Drizzle over the salad, toss, and serve immediately.
Makes 6 servings (about 6 cups)
