Granny’s Apple Granola
4 c. old-fashioned oats
1 c. shredded coconut
1 c. chopped walnuts
1/4 c. packed brown sugar
1/4 c. vegetable oil
1/4 c. honey
1 t. ground cinnamon
1 t. ground nutmeg
1 1/2 t. vanilla extract
1 c. dried apples
Preheat oven to 350 F. In a large bowl, combine oats, coconut, and walnuts. In a saucepan, combine brown sugar, oil, honey, cinnamon and nutmeg. Bring to a boil. Remove from heat and stir in vanilla. Pour over oats mixture and toss to coat. Spread in a large baking sheet and bake at 350 F for 15 – 20 min. Open oven and stir granola every 5 minutes, to brown evenly. Cool slightly, stir in dried apples. Store in airtight container. Makes approximately 7 cups granola.
