Take a refreshing dip into a healthy, delicious, plant-based bowl today! This Mermaid Smoothie Bowl is completely plant-based (vegan), and packed with the cool, rich goodness of bananas, citrus, chia seeds, soymilk, and spirulina—a nutrient-packed, blue green algae that gives this smoothie bowl it’s pure ocean color and nutrition punch. I’m a fan of including more algae, such as seaweed and spirulina, in the diet more often as a sustainable source of nutrition. In fact, you’ll see my article on algae in the summer 2020 issue of Oprah Magazine.
Just whip up 6 ingredients and you’ll have a healthy, flavorful breakfast, mini-meal, or hearty snack ready in no time. While you can enjoy it right away, for best results, whip up this smoothie bowl the day before, let it chill in the refrigerator overnight, and the chia seeds will help gel in order to create a pudding-like, creamy texture.
