Toast to New Year’s with a Healthier Cocktail





Cucumber-herb champagne sparkler

This New Year's-worthy cocktail comes from Sharon Palmer, RD, author of The Plant-Powered Diet. Simple, elegant, and perfectly toastable.

Serves 1

Champagne or dry sparkling wine (we used Chandon)
1/2 cup lemon-flavored mineral water, to top
1/4 cucumber, sliced
3 leaves basil, chopped

FILL a champagne flute ¾ full with dry sparkling wine

TOP off with lemon-flavored mineral water

SLICE a cucumber and place 3 slivers in cocktail. Add sliced basil, and let float.
