You’ve probably already noticed that I have a thing for farmers markets. I get a thrill every time I walk into that lively group of tables and tents, with smells of fresh strawberries, peaches, and flowers washing over me. Those stacks of colorful root vegetables, verdant leafy greens, and bright citrus fruits seem like nature’s art to me. How can anything be lovelier? I can’t resist taking home big bags of produce, like candy pink striped radishes, red okra, and the freshest asparagus to be found. And then my meals for the whole week are inspired by these delicious finds. And that’s the inspiration for my recipe roundup this month. My blogger friends share my same passion, and know just what I’m talking about when I put together this gorgeous collection of farmers market inspired recipes. The vegetables used here are all fresh and not processed, and you can taste the difference in the quality of the salsa. It tastes refreshing and so delicious.

This salad is no exception! Filled with produce from the farmers market, this recipe is one that you will want to put on your menu rotation.

Just as the title suggests, it is a salad made with roasted eggplants, bell peppers, and tomatoes. All the veggies are roasted to almost charred because it gives that smoky taste. Everything is then smashed together and seasoned with PLENTY of lemon juice, handful of parsley, dash of cumin, garlic, salt, and pepper. I don’t know what it is, but the combination of all these works in unison.

This Asian quinoa salad is so delicious, healthy and filling. Packed with protein, fiber, vitamins and minerals, add tofu for a complete nutritious vegan meal.
