Kachumber (Cucumber) Salad

You might have tried this traditional Indian cucumber-rich salad known as kachumber salad at your neighborhood Indian restaurant. But it’s something you should bring to your own home kitchen, as well. This fresh, light salad (which is also vegan and gluten-free) is based on a few classic ingredients: tomatoes, cucumbers, red onion, lemon juice, cumin, and black pepper. It’s simple enough you can whip it up in 10 minutes, but it’s also healthy and packed with flavor. Plus, if you are avoiding added oils, sugar, and salt, this plant-based recipe checks the boxes. This salad is the perfect accompaniment for any meal, such as my Chana Masala or Curried Yellow Lentil Stew. I love Indian foodways, but I’m not a true expert in this beautiful cultural food tradition. Description

This traditional Indian cucumber-rich salad known as kachumber salad is fresh and light, and it’s also vegan, gluten-free, and free of added oils, salt, and sugar. You can whip it up this flavor-packed recipe in 10 minutes with just a few ingredients.


Ingredients

  • 4 small cucumbers, thinly sliced
  • 3 medium tomatoes, chopped
  • ¼ red onion, diced
  • 2 tablespoons chopped fresh cilantro or parsley
  • 2 tablespoons chopped fresh mint
  • ½ lemon, juiced
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cumin
  • 1/4 teaspoon salt (optional)

Instructions

  1. Place cucumbers, tomatoes, onions, cilantro or parsley, mint, lemon juice, black pepper, cumin, and salt (optional) in a medium salad bowl. Toss gently.
  2. Chill until serving time. Makes 4 servings (about 1 cup each)
