Creamy Peach Yogurt Parfait

One of my all-time favorite, easy plant-based recipes is a simple yogurt parfait recipe featuring peaches and granola. This Golden Peach Yogurt Parfait features your favorite brand of vanilla plant-based yogurt (I like Kite Hill, So Delicious, Silk, and Forager brands), a golden turmeric granola (you can use a prepared one such as Nature’s Path or try my recipe for Turmeric Hemp Granola), and peaches (use fresh in season, frozen, canned or even dried).

This simple delicious recipe gives you a good dose of nutrition for a plant-powered breakfast, snack, and even dessert. With only three ingredients, you can make it in five minutes. I love to make this recipe as a meal prep—prepare it in a mason jar, screw on the lid, and grab and go for a healthy meal on the run. It’s also perfect for kids lunch boxes or gym post workout snacks. You can swap out the granola for your favorite variety, and as an optional ingredient sprinkle hemp seeds, sunflower seeds, or chopped walnuts on top. Substitute peaches for seasonal fruit, such as berries, bananas, and persimmons.

What is a parfait?

A parfait is basically a type of creamy dessert that is served in layers in a tall glass, so you can view the layers. You’ll often find parfaits featuring ice cream, puddings, whipped cream and fruit. A fruit parfait is a recipe that features creamy fillings layered with fruit. There are many types of fruit for parfait—this recipe features peaches, but you can choose from berries, melon, grapes, apricots, plums, pineapple, passion fruit, and figs to create healthy, colorful parfait recipes. Description

Make the easiest ever three-ingredient, five-minute vegan Golden Peach Yogurt Parfait recipe featuring vanilla plant-based yogurt, golden granola, and peaches. The perfect healthy delicious yogurt parfait treat!


Ingredients

Scale
  • 1 (6-ounce) carton plant-based vanilla yogurt (i.e., soy, almond, or coconut)
  • 1 medium peach, sliced (fresh, frozen and thawed, canned and drained, or dried)
  • 1/4 cup Golden Turmeric Granola (make this granola recipe from scratch here, or try any flavor of granola you prefer)

Topping (optional)

  • 1 tablespoon hemp seeds, chia seeds, sunflower seeds, or chopped walnuts, almonds, or pecans

Instructions

  1. Spoon half of yogurt into a glass serving dish (about 1 1/2 cup size)
  2. Top with half of peach slices.
  3. Sprinkle with half of granola.
  4. Repeat steps, layering remaining yogurt, peaches and granola.
  5. May top with seeds or chopped nuts (optional).
  6. Serve immediately.

Notes

You can substitute canned, unsweetened peaches when fresh peaches are unavailable. Or you can substitute other fresh seasonal fruit, such as bananas, berries, and mango.
